chicken pomodoro


Ingredients:
• 4 chicken cutlets
• 2 Tbl. Spoons Vegetable oil
• ¼ Cup Vodka
• ½ Cup Low-sodium chicken broth
• 2 Tbl. Spoons Fresh Lemon Juice
• ½ Cup Chopped Roma Tomatoes
• 2 Tbl. Spoons Heavy Cream
• 1/3 Cup Scallions

Cooking Directions:
Season cutlets with cracked salt, fresh cracked pepper and then dust in flower. Saute cutlets in oil until cooked through. Transfer to a platter and pour off fat in pan. Deglaze (away from flame) and cook until vodka is nearly gone. Add the broth and lemon juice then return the cutlets to pan and cook on each side for approx. one minute then Transfer cutlets to warm plates. Finish the sauce with tomatoes and cream, heat through then pour over cutlets. Finally, garnish with Scallions.
